Raw Vegan Raspberry Ganache Fudge Cake


You're right David, riding a bike, reading, and tea are always good, especially if it's with you and on Alberta st. so I can ride my bike there, but you know what's even better? My exquisite, heavenly raw cakes! Too bad you had to do work like crazy, I'm still saving you some.

Fudge cake:

     -3 cups of  dry walnuts
-1 cup pitted Medjool dates
-2/3 cup unsweetened cacao powder
1/4 teaspoon sea salt

Frosting:

-1/2 cup liquid coconut oil
-4 tablespoons cacao powder
-1 tablespoon maple syrup

Filling:

-1/2 cup raspberries

For the cake, combine all the ingredients and mixed well.


This is how it looks like when it's ready to be molded


It was so hot in Portland, my coconut oil was already melted. Add cacao and maple syrup.



I added the frosting and the put the cake in freezer for a few minutes, when the frosting is hard, I add the raspberries.


Tada! My good French friend calls it "The Love Cake"
